am I right, that the license is being tracked? My backup server has to be always (least once a week) online! Why? What type of data will be copied to vembu portal? In times of GDPR this is not a usual way...

The BDR backup server validates the licenses information with Vembu Portal periodically. Our licensing is based on Per CPU Socket/VM for Virtual Environment and Per machine/application for the physical environment. So, we send the above information to our portal server over HTTPS to validate the license information.
So, to get a little bit deeper in what information you are collecting: ipaddress of server, name of server, names of all VM's, and - of course - licensing information. And what else??? Please add all things you are collecting.
Could you please explain why are you collecting these things?
We have a lot of licensed vSphere Servers and VMware is not collecting anything for licensing purposes!
Nevertheless - your software is really really great, but...
Vembu Software collects the following information,
Information of Host server it has been installed in (Host Name, OS details, and MAC Address)
Information related to Vembu BDR backup server/agent (eg: Vembu BDR ID, Vembu BDR Suite edition, Vembu BDR version, and etc.)
Information related to the backup job and backup reports (eg: Backup job name, Backup job type, Backup data size, Backup job status, and etc.)
Information related to Host and VM which have been selected for backup (eg: Host/VM name, Host/VM IP address, Host/VM UUID, and etc.)
Vembu uses this data to validate & manage the licenses, simplify the license management process, provide swift technical support and also to improve the user experience.
