The feature to configure backup for only Mails, OneDrive, Calendar, or Contact in any combination, instead of the full User Mailbox, is in the testing phase and planned for the next release in October 2020. Also, the feature to exclude folders from OneDrive backup is already in our roadmap.

Meanwhile, we have a workaround for backing up only the emails instead of the complete mailbox. With this workaround, the user can only perform mail level backups to all the users in the Domain. OneDrive, Calendar, and Contact backup will not work.

Steps to perform Mail only backup:

1. Sign in to the Azure Portal using your Microsoft account.

2. Navigate to API Permissions on the left pane and remove both Delegated permissions and Application permissions for the below APIs from the Azure portal.

      Sites.ReadWrite.All
      Files.ReadWrite.All
      User.ReadWrite.All
   

3. Revoke admin consent.

Note: We have not tested the above workaround internally. You can use this workaround temporarily to configure mail only backups to all the users in the domain.
